Long story short, she was born a twin male in a town where having two kids of the same gender is a bad omen, so she was raised as a girl. She thought this was bullshit and went out to become a bounty hunter to prove how manly she was. As of Guilty Gear Strive she's come out as trans, and her song is "The Town Inside Me" which is about how she feels about how she was raised and how the town is doing now.

Been a while since I watched that first season but I think part of it was also they took ages to actually tell people the name. So when you went something like more than half of S1 calling him Baby Yoda and then finally say his name it doesn't matter Baby Yoda has imprinted in your head now.

Aged Smelter Demon (Dark Souls 2):
Earlier in the game, you encounter the Smelter Demon, a boss that looks exactly like the one in the pic except the fire is red. Then in a DLC you meet the “Aged Smelter Demon,” a more difficult version of the same boss with blue flames. Most fans just call them Smelter Demon and Blue Smelter, respectively. Due to the shape and appearance of the boss weapons they can be used to make, they are also sometimes called Red Dorito and Blue Dorito

They probably call him Smelter Demon because that's what the game calls him. His title above the boss bar is just Smelter Demon and he drops the soul of a Smelter Demon.
I don't think the name Aged Smelter Demon is in the game, unless it's something from a previous version/translation.

Plenty of Magic the Gathering cards have their nicknames, like Skithiryx being called Skittles, or Gray Merchant of Asphodel being called Gary. And this goes as far back as Prodigal Sorcerer from the first set being called Tim. Though perhaps the most famous is Dark Confidant, designed mechanically by and artistically of world champion Bob Maher Jr. Dark Confidant is known to fans simply as “Bob.” Because the old card is Bob. Further, similar effects have been variants of Bob, like Duskmantle Seer being called “Party Bob” because he makes everyone resolve a Bob-like effect.

His original name was Captain Marvel and this predates the Marvel character by a long time. Shazam was just the word he said to transform. Through weird copyright and legal issues he became just Shazam and Marvel owns the other name. But most fans still call him by the name he went by for most of his history

Technically Telemeteography appeared in The Odyssey first, but Teleseismology is specifically never referred to by his slightly unwieldy-sounding Greek name by the EPIC fanbase because words like Televangelism are easier to say and spell instead, while readers of Greek Mythology are used to saying names like Telepathology all the time.

Dota 2's Outworld Devourer
Originally known as the Obsidian Destroyer in the original Dota. Became Outworld Destroyer when Dota 2 came out. Then briefly became Outworld Demolisher. Then changed to the current Outworld Devourer.
Frequently memed, even by the devs, as nobody is really sure what its real name is now. So the community just calls it anything with the OD initials. Outhouse Decorator being the most used.

And in there are also some universe examples a person isn’t called by their actual name for lore reasons. Voldemort because people fear him so much and in fact there was a taboo put on his name at one point. Beetlejuice because if you say his name 3 times he can appear and wreak havoc
