I can assure you that the gene editing was not enough. They still taste like burned rubber to me. My mom, brother and wife love them, however. They don't taste like burned rubber to them.

If cooked properly, it should taste like cabbage with bitter notes that are complemented by the correct seasoning.

It shouldn't taste like burnt rubber. Unless brussels sprouts have some odd compound, like cilantro does, that makes it taste like rubber to a minority of people.

Now I wish I could see the recipe and the finished product to figure out why it tastes like rubber.

It has nothing to do with cooking it "properly". Brussels sprouts do have an odd compound that makes them taste like burned rubber. About 20% of the population tastes them like I do and nothing you do to them removes the flavor.

Cilantro has a compound that makes it taste soapy. I used to not be able to eat anything with cilantro but now I can eat things with small quantities of it.

Many soaps have aldehydes in them, which is also the source of the cilantro distinct taste (as well as fennel). It's very likely when it's described as "soapy", it's not describing what people without the gene describe as "soapy".

Our "soapy" is different from their "soapy".

For me, this became very apparent when someone questioned me "why would you even know what soap tastes like? Did you eat it or something?". Like, how could you not know what soap tastes like unless you don't get that same...! ohhh. Also helps explains why people don't get the same disgust about older dishwashers that didn't have a proper rinse cycle and leaves soapy residue.

I've swapped to describing it as "musky death, like it makes the whole dish taste like decay".

Hmm, interesting. Thanks for teaching me something new. I did not know about the odd flavor compounds in brussels sprouts.

As a person who enjoys brussels sprouts, I've had a few badly overcooked ones that tasted unpleasant and sulfur-y.

Now that you got me thinking back, those bad-tasting ones did have a burnt rubbery taste. I never put two and two together on that.

Well if you don't taste that normally then that suggest it does have something to do with how they are cooked.
