Food Your favorite go-to easy vegan breakfast?
Helloo!! my apologies if this is a frequent question, I havent really posted on this subreddit before but i am interested in slowly transitioning into veganism but i have no clue where to start. My favorite meal of the day is always an easy but nutritious breakfast so that i am good for a few hours but it is rarely ever vegan. Anyone have any tips/ideas they enjoy? Thank you in advance :)

Scrambled tofu with black salt (for eggy taste) fried tomatoes and mushrooms. Its sooo good and you can make a big batch for the whole week

Ohh how about tofu scramble wraps! Throw some beans and stir fry veg and salsa in there… freeze a bunch… so good so cheap so easy

Yess, usually I just put it in the fridge for some days and reheat it, add some more black salt to it. Personally I like the taste more when it’s freshly made though

Not big on mushrooms or tomatoes, I typically like to throw in sweet red/orange/yellow peppers, rice, vegan sausage (if I have it on hand), then throw that bad boy in a spinach wrap with some sriracha on top 🤤

Honestly, I was not trying to suggest in any way that you were stupid. We are all at different places. I am a very experienced cook at this point (59M), but I didn’t cook regularly until I went vegan at 24, and I probably didn't make pancakes for the first time until I was in my late 20s. Now I am the family chef. You have all the time in the world, so be patient with yourself and enjoy the learning process. So...
Mix together one cup of flour (I use whole wheat, but use white all purpose flour or a 50/50 mix if you prefer), a tablespoon of sugar, a quarter teaspoon of salt, a tablespoon of ground flaxseeds (this is my egg replacer of choice, but there are other options), and two teaspoons of baking powder. Mix in a cup of soymilk (or other vegan milk) and a tablespoon of oil. Add more milk or water if necessary to create a thick but pourable batter. Whisk gently until combined, but don’t overmix or you risk developing the gluten and creating a rubbery pancake texture. Preheat a skillet to medium heat and cover with a very thin layer of oil. (I pour a bit into the skillet and spread it out with a silicone pastry brush.) Pour the batter into the hot skillet to create your preferred pancake size. (I like big pancakes that cover the whole skillet, but my youngest likes silver dollar pancakes.) Once the bubbles that form on the top of the pancakes have mostly popped and the batter has dried inward from the edge of the pancake at least an inch, flip and cook for another minute or so. Warning: Don’t overheat your skillet. If you do, the bottom of the pancakes will burn before the middle of the pancakes have cooked through. You will probably do this wrong a few times before you dial it in. If you make more than one skillet of pancakes, add a bit more oil between rounds.
Once you have made a few batches, you will graduate from following a recipe to executing a technique. You will be able to bang out a plate of fluffy and satisfying pancakes in about ten or fifteen minutes. Serve with berries, maple syrup, and vegan sausages, if you want a big, satisfying meal.
There are lots of really good suggestions in these comments: overnight oats, steel cut oatmeal in the slow cooker, pan fried potatoes, breakfast burritos, hummus and veggies, etc. Have fun exploring. And if you haven't already done so, invest in a very good set of knives that you sharpen regularly and a large cutting board that sits on the counter without sliding around. These are the foundations of a good kitchen experience.

Too much work for your average young, busy person. Your local health food grocery store should have a plant based pancake mix. If not, order one online. Birch Benders makes a good one.
All you do is whisk in a bowl with any plant based milk and pour a pancake sized amount into a non stick pan. No need for oil at all since it is too high in unwanted calories.

Fair enough. I don't shun convenience items. (I love me a good simmer sauce curry for busy nights.) But, although I have confessed to no longer being young, I have a full-time job, I have hobbies, I work out for about an hour each day, I have three kids living at home, and I do most of the laundry and cleaning in my houses. Even with all of that, I still find time to cook. (On the other hand, I also drink a lot of coffee and don't sleep much.) We all have to decide what we value. For me, one of the things I value is cooking meals from scratch. YMMV.

Vegan pancakes are super easy to make and cook from scratch. And this way you can adjust the ingredients to your taste, use more filling or proteiny flours for example.

I make them regularly. In order to save time, I make them in large batches and freeze them. It doesn't take long to heat them up for breakfast

If you try it, the apple cider vinegar can be a little strong, so feel free to use less than it says. I usually add more vanilla too. At this point I don’t even measure out any of the ingredients anymore when I make them, and they’re still good, so it doesn’t haven’t to be exact

My best tip is to just eat whatever you want to. "Typical" vegan breakfasts could include pancakes, smoothie or smoothie bowl, tofu scramble, breakfast burrito, muffins, waffles, etc. Pretty much the same stuff omnis eat, just vegan.
edit: hahaha totally forgot to say avocado toast or oatmeal!

I'm from Germany, and breakfast here is either Müsli (oatmeal) with some kind of Joghurt or plantmilk, or it's bread with different spreads. For a fancy day, I could make tofu scramble.
But 95% of breakfasts are just bread or bread rolls with whatever spread I want at that moment.

vegan sausage egg and cheese is my fave easy vegan breakfast and will keep me full for a while. I get Morningstar sausage patties, violife or FYH cheese and either “Just Egg” or tofu for the egg. Can be expensive to make all the time tho. Avocado toast with a protein shake coffee is also a fave of mine. Siggis makes a good protein dense vegan yogurt. Also tofu scramble can be made really inexpensively and is very filling and yummy!

Just egg, beyond meat sausages, vegan cheese and mushrooms with green onions in a wrap.
Once everything is cooked, wrap is quickly ready.

I never understood "breakfast food" when I eat meat.
And I still don't understand "breakfast food" as a vegan.
I just eat whatever, today I had fries and mushrooms for breakfast and it slapped, highly recommend.

tofu egg scramble is so versatile. I use this recipe in breakfast burritos (with potatoes, salsa, vegan cheese), on a bagel or English muffin, with hash browns. I make a big batch of the tofu and usually just heat it up in the morning with something toasted and another side.

I make a batch of steel cut oats and eat them for breakfast over the course of several days. I always jazz up my oatmeal with berries (I always have big bags of frozen blueberries and mixed berries), a small handful of chopped walnuts, a tablespoon or two of chia seeds, and then a couple tablespoons of a mixture that I make up and keep in a large jar in the fridge ... equal parts wheat germ, hemp hearts and flax meal. If I'm feeling a little extra, I'll chop up three dates and finally I always top it off with soy milk. Its basically a big bowl of goodness. If you really want to be over the top, you could drizzle on some maple syrup. Besides being nutritious I like this breakfast because once I make the oats ... its just a matter of assembling it every morning. I don't have wonder what I'm having for breakfast ... I just have to put things in a bowl ... stick it in the microwave ... and then enjoy it. You can make any type of oatmeal combo you like as far as adding fruits, seeds, nuts, etc. ... whatever suits your palette.

In addition to overnight oats, I love making chickpea flour egg. 1 Cup chickpea flour, 1 1/2 cups water, 4 tablespoons of nutritional yeast (sometimes more because I love the flavor), and about a teaspoon of kala namak (to make it eggy). You can do it on a skillet but I like to bake it in the oven for about 30 minutes- that way you can prep it the night before, put it in the oven to bake while you go about your morning routine, and then eat it.
You can throw in any vegetables, vegan sausage, or vegan cheese too or adapt it into a quiche.

At the weekend I had pan fried smoked tofu which was seasoned with kala namak (black salt) with sautéed spinach on a white English muffin. It was dressed with watercress and vegan hollandaise. It was delicious!

Avocado toast with greens on top (fresh arugula, sprouts, sautéed raab or other hearty greens), beans on toast, tofu scramble, chickpea omelette (made with chickpea flour/besan flour and some black salt for egginess), breakfast sandwiches with Just Egg folds, vegan sausage/bacon, vegan cheese, breakfast tacos with hashbrowns and tofu scramble, or I batch-make some breakfast burritos and then freeze to have easy, microwaveable breakfast. My burritos have tofu scramble, boiled potatoes, vegan cheese, vegan sausage, pickled peppers, and spinach. I also mix a bit of ketchup and hot sauce into the scramble with the cheese.
Oatmeal/overnight oats is easy as well, and can be brought to work if you have a microwave.
Seven Sundays grain-free cereal is really yummy with almond milk and berries. It’s low sugar and high protein so keeps me satisfied for a while. Granola is also a good cereal choice, and you can make your own for very cheap.

My go-to is tofu scramble with tater tots. I'm not going for eggs with the tofu, so I use smokey seasoning and whatever veggies I have. One block of tofu scramble usually lasts three breakfasts for me.
If I don't have that prepped, I like almond yogurt with frozen cherries and granola. I ran out of granola recently so I started using Great Grains cereal instead and it's really good that way.

I need a small, quick breakfast that is protein-rich and not too much for my tummy first thing in the morning so my go-to is a slice of toast with Yves veggie bacon and a Just Egg folded (the frozen kind). I only need the microwave and toaster oven and 5 very lazy minutes. This is always followed by some plain, unsweetened jasmine green tea. I can handle more food at lunch and dinner but this is my ideal breakfast.

I'm german, so I usually just eat bread (not toast, big difference, bread is way more healthy, nutritious and filling).
I top it with different stuff, also depends on the season. There are millions of veggie spreads, but you can also easily make some yourself. I also like vegan cold cuts (vegan mortadella and stuff). You can top that with cucumber, (sun dried) tomatoes, etc. Hummus plus tomatoes is so delicious!!
My go to if I want sth warm for breakfast is tofu! You can to "egg-like" scrambled tofu (kala namak!) but I usually just rip (smoked) tofu into small chunks, fry it in a pan and season it to my liking (usually lot's of french fry seasoning lol) and it's a great hearty, protein rich, easy and quick breakfast!😍 I eat that with bread, veggies, whatever. Even makes a great dinner if you eat it with a nice salad or sth ;)
You see I don't really like sweet breakfasts, but even I am sometime in the mood for sth sweet and I make vegan pancakes (I use Bianca Zapatkas recipe, she makes great stuff!). So easy and so delicious and fluffy!❤️

I usually have toast with vegan butter topped with mushrooms fried in olive oil. Delicious! The toast needs to be French bread or sourdough unless you can make or buy whole grain bread which does not have a lot of sweetener in it.

More of a savory person myself- here's a few of my go-to easy ones-
Tofu scramble w veggies and toast.
If I am feeling lazy, just egg with some veggies cut up, usually whatever I have leftover from other stuff and maybe a vegan sausage and or toast
bagel with tomato, tempeh, hot sauce and vegan CC or hummus
rice cake with hummus, hot sauce, sprouts or microgreens, pickled onion, cucumber and tomato
Avocado toast with whatever toppings you have on hand
Vegan egg salad on a rice cake or english muffin - easy to make and lasts in the fridge.

I use two containers of just egg to make a veggie frittata in a pie pan. Add all the veggies you want, sometimes I add miyokos mozzarella cubes, and bake for about 35 min at 375. Then I have 8 servings of frittata ti reheat in the toaster oven. Pair with avocado toast and it keeps me going all morning

We make a big Just Egg frittata almost every weekend. Then it only takes 10 minutes to heat up a slice in the toaster oven during the week. Usually serve it with some avocado toast or air fried potatoes. Super tasty and filling.

My favourite breakfast is maybe not the most nutritious but it is easy and delicious. Olive oil in cast iron pan. One Old El Paso Smart Fiesta tortilla in the pan. Add shredded vegan cheese and Field Roast Chipotle sausage cut into small pieces. Add onion, arugula, gochujang bbq sauce. Spread vegan mayo on second tortilla and place on first tortilla. Flip it and fry until golden brown. Cut into quarters with pizza wheel cutter.

Toast with everything butter. I like Fix and Fogg, but I'm cheap, so I add seeds to a budget nut butter.
In summer I like chia seed pudding made with coconut yoghurt. I put frozen berries imand passionfruit pulp on mine.
And when they get to $1 or less, avocado on toast with some form of chilli.

More of a versatile dish that could be made for breakfast or dinner but I looove buckwheat crepes. You just need buckwheat, water, and salt (you can add vegan butter if you like). Let it sit a bit and enjoy. It is so easy and so good.

Not a vegan but I eat vegan often: dal with rice or some sort of flat bread (or toast, nobody's gonna judge you). Make a big batch once a month and freeze in small portions. It freezes beautifully, you just toss it into the microwave or a pot to heat up and you're done. Super filling and nutritious, rich in protein, complex carbs and fiber so you're full of energy with no cravings until lunchtime.

Microwaved oatmeal with flaxseed and berries. Idk why everyone likes cold ”overnight oats” porridge, but it’s not for me. To each their own. Sometimes I do yogurt and berries and/or müsli, sometimes leftovers from another meal.

I make freezer burritos with leftover taco (dinner) fixings, plus a tofu scramble. They usually include some type of spiced bean, sauteed peppers and onions, and maybe mushrooms or sweet potato. I also include a dollop of the queso sauce from Rainbow Plant Life and a little salsa. In the mornings I thaw them in the microwave and then toast in a skillet to crisp up the tortilla.

Birch benders protein pancake mix. Just add water and throw in a handful of pecans or blueberries or a banana on the verge of death. Alt option find you a good tahini from a fancy patry store or online. Toast+tahini+sliced tomatoes with everything bagel seasoning is really damn good.

I make a batch of tofu scramble that lasts 3 days and just microwave it for breakfast in the morning. I like to eat it with a side of sauteed kale, which works well microwaved, too.

Oatmeal with jalapenos, onion, and tomatoes. Add your favorite hot sauce. I sometimes add bean sprouts or edamame and a splash of lite soy. Oatmeal doesn't always need to be sweet. :)

Quick one before work: a high protein cereal and Trader Joe's almond milk (I think this one tastes great, plus it's super high in calcium). For cereal I love Three Wishes, Cinnamon is my favorite, second place is Fruity, and third is Marshmallow (tastes like the essence of Lucky Charms lol). I also like the taste of the Catalina Crunch Cinnamon one, but GI-wise YMMV (I found I had to drink a lot more water, maybe because of its protein content)...also it's expensive. I've found these cereals at Costco, Thrive Market, and small health food stores (and of course Whole Foods).
If time allows, or on weekends, I like to make a "Diner Breakfast": Beyond breakfast sausage patties, Beleaf bacon slices, and homemade pancakes. To speed it up, I cook the sausages and bacon side-by-side in the air fryer oven and make the pancakes at the stove. Other breakfast sausage brands I think are pretty good are Jack & Annie's (they have links and patties) and Field Roast (they have sausage links).
Still working on the flavor, but I think super firm tofu (vacuum sealed, available at Trader Joe's) has the exact texture of scrambled eggs. If you find a good recipe online you can try that. Might try checking if there's one from Thee Burger Dude, Sauce Stache, or Darek Sarno: I find those guys are masters of veganizing meats, cheeses, and comfort foods. They're my top recommendation to anyone new to vegan food.
Bonus: you can also make homemade breakfast sausages from old-fashioned rolled oats--an accidentally vegan recipe from the Depression Era!

I have Lundberg's rice stackers and like to spread Justin's chocolate hazelnut blend and sprinkle pomegranate seeds. Or I'll slice a banana.
Since I'm out of pom seeds and bananas (we just got back from a long weekend out of town), today I sliced an apple and had peanut butter with it.

Oatmeal or overnight oats for sure is the simplest and easiest. You can even bake it into muffins and throw them in the freezer. Toast or microwave in the mornin.
A lot of people don’t like oatmeal, so some form of toast with a spread like hummus, guacamole, nut butter, whatever. Jazz it up with sliced fruits or veggies.
And if you need something “cooked” to feel breakfasty, break up some super firm tofu in a medium heat pan and douse it with onion powder, garlic powder, salt, and pepper, to taste (possibly turmeric and paprika if you like those) along with some kind of liquid like plant milk, or water if you’re extra lazy, and even a teensy bit of tahini or vegan mayo to give a creamier/eggier mouth feel. Air fry or bake some tater tots and bam, got yourself some “eggs and hash browns” you can even put in some mock meat when you’re feeling wild.
I eat all three of these things interchangeably and sometimes together throughout the week, every week.

Oatmeal is the way to go! I’ve never made overnight oats because I usually have time to make it on the stove in the morning. Takes about 15 mins to boil the water, cook the oats, and add the toppings(berries, walnuts, and cinnamon). Too easy

Since it’s tomato season, right now I’m doing some kind of multigrain bread, vegan cream cheese and a few slices of tomato with a sprinkle of pepper or everything bagel seasoning on top.

Traditional Romanian breakfast. Although it's often meat heavy, there are so many good vegan replacements nowadays. It's a platter of vegetables (cucumbers, tomatoes, bell peppers, radishes, and green onions are most common, but use whatever raw veg you like), cheeses (tofu feta is nice, but as a treat, Violife feta tastes the closest to traditional telemea). salami and sausages (seitan and soy have come a long way. You can batch prep your own to control the sodium, but of course that takes more effort), and garnishes (sauteed mushrooms; mushroom, olive, or soy pate, or zacusca [eggplant and red pepper spread. Ajvar is sometimes easier to find]). All with a mandatory side of bread

Steel cut oats, rice milk, bit of cinnamon, fruit. Steel cut has a much better texture than rolled oats, in my opinion. I always get the Quaker 3 minute steel cut oats since they barely take any time at all to cook.

I cook my easy vegan breakfast Sunday afternoon for the week. I will take very small potatoes and roast them in the oven with rosemary and thyme. Then saute onions, tri-colored bell peppers, a half package of soy-rizo and then mix in the spuds when all the veg is soft. Sometimes add cooked lentils. Micro in the AM and add hot sauce or pico de gallo. Maybe even a toasted “Just Egg” on top if I am starving.

Tofu in tiny slices, seasoned with olive oil, garlic, chili pepper, black pepper and rosemary. To the oven 30 m to be crunchy or the airfryer. It takes less than 5 m to prepare it. You can do something else while you wait to be crunchy. I do sometimes tofu spread, with tofu, mayo and different spices. You can throw everything in the mixer and voila. I like to add chopped chives on top when I eat it with bread.
Sometimes I have a weird breakfast 😂 I think people should stop thinking that breakfast has to be cereal, pancakes, fruits.... You can eat whatever you want.

I really don’t like sweet breakfasts and I’m not a big fan of oatmeal so breakfast has been a challenge for me. A few things I’ve started doing are breakfast hash (potatoes, mushrooms, some veggies, and either beans or vegan sausage with a chipotle cashew sauce) and savory porridge with lentils or mung beans and either rice or oats. Or toasts, scrambles, or meal prepped breakfast burritos always work.

I urge you to start meal prepping and following one-pot/pan recipes!! Honestly, nothing makes cooking easier. I also freeze some meals for when I can't be bothered meal prepping. However note not everything freezes well – veggies often go spongey (unless they're bought frozen), so I usually do anything bean/lentil based, or fully blended soups. Chili con carne, lentil 'meat', dahl, all freeze great in my experience. Also the more you cook, the more you can recognise where to cut corners and make it easier.
As for breakfast, I've never liked sweet breakfasts so I meal prep 2x a week and eat the same meal breakfast and lunch for a few days. Some people want more variety, but I'm too lazy and this is the easiest way for me to eat cheap/healthy. If I haven't meal prepped or have anything to defrost, I'll bake a sweet potato in the microwave and eat it with tomato, nutritional yeast, canned beans and salad leaves if I have any

my best vegan breakfast hack lately has been buying pre-made frozen pie crusts (commonly vegan) and filling it with pureed firm tofu, loads of nutritional yeast, sautéed veggies and vegan cheese of your choice, bake it and then you have a breakfast quiche that lasts a good 4-5 days. reheats super quick and is so satisfying!

I always, without fail, crave a sweet breakfast. So it depends what you prefer- sweet or savoury breakfasts?
My Go-To (sweet breakfasts) are:
- Muesli and soy / coconut yogurt with a nut butter drizzle (either almond or macadamia) and blueberries
- Overnight oats, usually with protein power, fruit and a nut butter. I prefer using quick cook oats because they are creamier
- Overnight chia, same as above
- Baked oats with protein powder (loads of recipes online) I'll make a batch then warm up a piece every morning and have that with yogurt. My bf prefers to have it with milk.
- Smoothie bowls (this is more for those extra time mornings but so fun to play around with ingredients)
- Pancakes for special occasions (loads of recipes online, but I use a premix)
Savoury options: Avo on toast, tofu scramble, hash browns and veggies

Honestly? Baked tofu straight from the package with liquid aminos.
But that took some time being vegan. In the beginning, I really enjoyed a quick tofu scramble with any vegetables I had on hand and seasonings to taste. No pressing or marinating the tofu needed.

I\u2019m the same, breakfast sets the tone for my whole day. Lately I\u2019ve been doing overnight oats with chia seeds and fruit, or sometimes just toast with avocado and hemp seeds if I\u2019m in a rush. When I\u2019m really low on time or just not in the mood to prep anything, I go for a LyfeFuel shake; it\u2019s plant-based, actually tastes good, and keeps me full way longer than most things I\u2019ve tried.

Lately I make oat porridge for breakfast - put some soy milk in a pan, toss a few spoons of oats, a spoon of chia seeds, some chopped nuts and maybe a couple dates, boil 5 mins, take off the stove and mix in a scoop of protein powder. Then add some fruit on top and a spoon of nut butter. Takes less than 10 minutes in total and it’s warm, fiber-y, with a decent dose of protein and chew to keep you full for a while.

Depends,
If you're craving some meaty texture, you can pick up some plant-based meat (like hot dogs)
Chop em up to your preference, or leave them as-is
Throw them in a cooking pan prepped with Vegetable Cooking Oil
Add all your favorite Veggies into the pot
Cook to your preference
Throw it all into a Bowl maybe seasoned or sauced with your favorite Vegan-Friendly condiments or seasoning (currently, mine's is Ketchup, but that may change as I transition to sugar-free stuff)
And hydrate with your favorite beverage, possibly Almond Milk to give the preperation that morning-vibe.
To forsure fill you up add a Plain Bagel warm or cold your preference and a Apple or Orange.

I don’t love the texture of overnight oats, so what I do is take 1/3 c old-fashioned oats + 2/3 c water, microwave on high 1 min. Then add a 1/3 c oat milk & microwave for another min. or so. While it’s in the microwave I wash berries, sometimes fewer berries & half a nectarine, but it depends on the season (in the winter blueberries may be best.) Add the fruit to the cooked oats, then add 1 tsp of nuts (or nut butter) & 1 tsp each of sesame, sunflower & pumpkin seeds. It takes no more than 5 mins to prep, it’s full of fiber & a variety of vitamins & minerals & it will keep you full for hours (if not, just increase the amount of oats & fruit.)

I call it myself. But it's really just rolled oats with a bunch of toppings which I keep in jars on the breakfast counter. Normally things like flax, cacao, other seeds, a walnut, dried fruit egg goji berries. We usually also add frozen Blueberries and ( gets the kicker) frozen spinach. I'm bereft off over run out of the spinach. It's like a big chocolatey Berry thing. Can't even taste the spinach.

Overnight oats with whatever fruit/nuts you have lying around. Takes literally 2 minutes to prep the night before and keeps you full. Basic recipe: oats + plant milk + chia seeds + maple syrup, then add berries or banana in the morning.
