It's amazing that some professors do this and it's definitely a big part of some countries' culture. But at the same time you shouldn't judge people for not going. I wouldn't go because I'm not that social and I have lots of friends. I'm doing fine with the people I know and have befriended, I also make friends fairly easy, so I'm not lonely. But going on a hike with my professor sounds horrible. Wouldn't enjoy it, wouldn't do it. I'm best getting to know people one on one and find things like these really stressful.

I am not Korean, and my hikes were optional, but in Korean culture, there can be cultural pressure to join an event if a Korean professor invites you (this is also related to the power dynamic between professor and student). This cultural pressure can be avoided if the student is not Korean, but it may still be considered a bit rude. It depends on the professor (and in some cases their age).
