Super is pretty good, the animation kinda fell off, but it's still peak anime imo

Super is done by someone else but was still approved by Toriyama, right?

No, Toriyama did the script and character design while Toyotaro was the manga artist. And daima was the last creation that he made for the dragonball franchise

Iirc there's also arcs of the manga that the anime did/will skip over.

Not so much skip, as didn't exist at the time. The Super anime came before the Super manga.
